Salsa Fresca
the red sauce served with your chips. It is a zippy mixture of fresh tomatoes, onions, yellow chiles and cilantro.
Salsa Ranchera
it is made with three types of chiles one tame and two hot, tomatoes, onions and cilantro. Try with meat, fish and cheese.
Salsa Verde
it is a milder but tangy sauce made from tomatillos small, green Mexican tomatoes. Salsa verde is also good on meat, fish and cheese dishes and can effectively by used in place of the hotter ranchera sauce.
Gringo Sauce
our cooks named this mild, red enchilada sauce after the gringo whose mouth is not fireproof.
